Here’s what you’ll need for the southwest salad

Equipment:

Ingredients:

Lettuce – I used iceberg but you can romaine or spring mix.

Black Beans – you can also use red kidney beans.

Diced Tomatoes – I used Roma tomatoes but you can use any kind of tomato.

Corn Kernels – for a burst of flavor, use street corn! For my Street Corn recipe, click HERE!

Shredded Cheddar Cheese – you can also use queso fresco or mozzarella cheese.

Avocado – you can use smashed or sliced avocado.

Fresh Cilantro

Corn Tortillas – this is optional to make homemade tortilla strips but it adds that bit of crunch you want! You can also buy salad tortilla strips.

Canola Oil for frying

Taco Seasoning – you’ll use this for the tortilla strips and spicy ranch. If you want the recipe for my homemade taco seasoning, let me know in the comments below!

Ranch Dressing – I like Ken’s or Hidden Valley ranch, but you can use whatever brand is your favorite!

Hot Sauce – adjust to your preferred level of spiciness. I used Buffalo Wild Wings Buffalo Sauce.

How to make the southwest salad

Tortilla strips:

Begin by cutting the 5 small corn tortillas into thin strips. Heat oil in a pan or fryer, ensuring it’s hot enough for frying. Fry the tortilla strips until they turn golden brown and crispy. As soon as they are out of the fryer, sprinkle them with taco seasoning, giving them an irresistible zing.

Spicy Ranch Dressing:

In a bowl, combine 1 cup of ranch dressing with 2 tbsp of your favorite hot sauce. Adjust the amount of hot sauce according to your taste preference. Add 1 tbsp of taco seasoning to the dressing mixture, stirring thoroughly to ensure all the flavors are well incorporated.

Assemble the Salad:

In a large salad bowl, arrange the chopped lettuce as the base of your salad. Add the black beans.

Add the tomato and corn to the bowl.

Spicy Ranch Dressing

  • Combine 1 cup of ranch dressing with 2 tbsp hot sauce. Adjust the amount of hot sauce according to your taste preference. Add 2 tbsp of taco seasoning. Mix.

  • In a large salad bowl, arrange the chopped lettuce as the base of your salad.
