Today I had some leftover mandarin oranges I needed to use up, so I decided to turn them into some muffins for the week. These are a favorite in our house.     • 1 15oz can mandarin oranges

Crumble topping

    • 1/2 cup flour

    • 2 Tbsp granulated sugar

    • 3 Tbsp butter, softened

    • 1 pinch salt

Muffin Batter

    1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly to prevent sticking.

    1. In a standing mixer, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. These dry ingredients will form the base of your muffin batter.

HOW TO STORE LEFTOVER MUFFINS

Place in a gallon size zip-lock baggie. Can keep at room temperature for up to 3 days. After 3 days place in the refrigerator to keep fresh.
