Ingredients:

Cheesy Beer Bratwurst and Potato Soup

Bratwursts – I used a local brand but you can use any brat of choice.

Frozen diced potatoes – I usually but the potatoes o’brien. These come with peppers and onions but I usually add more fresh as well (that’s totally optional, I just like more veggies in my soup). You can also use fresh diced potatoes as well.

Beer – We always have bush light in our house but you can use any beer of choice! If you don’t have beer you can also use chicken broth instead.

Cream of chicken soup

Sour cream

Shredded cheddar cheese

Jalapenos – This is optional, but if you like a little heat, I highly recommend!

Seasonings – paprika, garlic powder, onion powder, salt and pepper.

How to make Cheesy beer Brat and Potato Soup

Begin by placing the liner inside of your slow cooker to prevent sticking. This will make cleanup a breeze once your delicious casserole is enjoyed to the last bite.

Arrange the bratwurst at the bottom of the slow cooker. You can use your favorite type of bratwurst, whether it’s traditional, spicy, or even a gourmet variety.

Next, layer the frozen potatoes O’Brien over the bratwurst. The peppers and onions in the mix add a burst of color and flavor. Feel free to increase the amount of peppers and onions.

For those who crave a little heat, sprinkle the diced jalapeño over the potato layer. This optional step adds a tantalizing kick that elevates the overall dish.

Pour the can of beer over the layers. The beer not only tenderizes the bratwurst but also imparts a distinct and delightful taste to the casserole.

In a separate bowl, whisk together the cream of chicken soup and sour cream. The combination of creamy textures and tangy flavors will create a luscious sauce that envelops the dish.

Pour the creamy mixture evenly over the contents of the slow cooker, ensuring that every nook and cranny is lovingly coated.

Sprinkle the paprika, garlic powder, onion powder, black pepper, and salt over the creamy mixture. These seasonings will harmonize beautifully with the other ingredients, enhancing the overall taste experience.

Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. The aromas that will waft through your kitchen as the casserole cooks are simply irresistible.

Once the cooking time is complete, take out the brats and slices, add back to soup. Then, add the cheese and stir to combine. Now your Cheesy Bratwurst and Potato Soup is ready to be enjoyed. Scoop generous portions into bowls, and revel in the harmonious blend of flavors and textures that make this soup a true delight!
